Turkey rolls with asparagus sauce and sweet potato

All people like turkey steaks. They are easy to prepare and you can eat it with almost everything. But with just a little effort they can become a specialty.

Beat or roll turkey to nice thin cutlets. Be careful not to break them or cheese be leak. Season them with curry, dried paprika or chilly, pepper, rosemary, garlic and salt. Spread soft goat cheese on one side, add freshly chopped spinach and roll the cutlets. Peal sweet potato, chop it to medium size pieces and season it with salt and pepper. It takes same time to cook rolls and sweet potato so place them in the preheated oven 180˚C and cook for 30-40 minutes.


While rolls are cooking prepare asparagus sauce. Wash and clean a bundle of asparagus. If the bottom is hard chop it off. Slice asparagus to 2-3cm and put cuts in 2dl of boiling water. Cook for 2 minutes and remove ½ and drain it. The rest must be cook till asparagus are completely soft. Once they are soft use a stick blender and ground them. Peel one clove of garlic and squeeze it with a knife so it pops. In a small pen melt butter and add garlic. When butter stops foaming remove garlic, add drained asparagus and cook for 2 minutes. Add grounded asparagus and cream, season with pepper and salt and boil the sauce.

- 2 turkey steks
- 200g goat cheese
- 200g spinach
- 1 big sweet potato
- 250g asparagus
- 2 garlic cloves
- 100g butter
- 100ml sweet cream
